Japanese Tiger Prawn

Known as the kuruma prawn, abundant in autumn. Meat is crisp but flavour is mild. Most suitable for stir frying whole with premier soya sauce or braised in tomato sauce. It is also very delicious raw. The shrimp head is packed with golden cream when in season, making it an excellent ingredient for congee. The taste is heavenly.
