The unicorn leatherjacket (Aluterus monoceros) is a filefish of the family Monacanthidae. A fish harvested by net fishermen in waters around Hong Kong and South China Sea. Live ones are sometimes sold in local markets. It is a medium-sized fish with plenty of crisp meat. Most suitable for stir-frying in dices, or steaming with black beans which is very savoury. Smaller filefishes are ideal for soup or deep-fried with salt and pepper.
