材料: [A] 1 Indian pike conger maw; 1 piece of shin pork; 1 or 2 conches (depending on size, about 3 catties in total); yam and gordon enryale seeds, 4 taels each. [B] Ingredients for preparing the Indian pike conger maw : 3 cloves of garlic; 2 dried onions; a few spring onion lengths and a small teaspoon of Chinese rose wine. 時間: 4 hours  
 

Indian pike conger maw and conch soup with yam and gordon enryale seeds

材料: [A] 1 Indian pike conger maw; 1 piece of shin pork; 1 or 2 conches (depending on size, about 3 catties in total); yam and gordon enryale seeds, 4 taels each. [B] Ingredients for preparing the Indian pike conger maw : 3 cloves of garlic; 2 dried onions; a few spring onion lengths and a small teaspoon of Chinese rose wine.

時間: 4 hours

作法:
1.Soak the Indian pike conger maw in cold water one day in advance.
2.Put the softened maw in a pot of boiling water with the ingredients in [B]. Boil for 15 minutes.
3.Turn off heat and take out the maw which should be tender by now. Cut it into 1-inch lengths with scissors.
4.Break the conch shell and remove the meat. Wash thoroughly.
5.Boil a pot of water, quick boil the shin pork, conch, yam and gordon enryale seeds and rinse with cold running water.
6.Wash the quick boiled conch to remove the slime on the surface, then cut into small dices.
7.Boil three big bowls of water and add the ingredients in step (5). Boil on high heat until it boils, then turn down to low heat and slow cook for 3 hours. Season with sea salt before serving.

1.It is not easy to break the conch shell at home. You can ask the fishmonger to do it for you.
2.You can use any kind of fish maw.
3.This is a very nourishing soup. Enjoy it regularly for health benefits.
