Steamed eggs with clams

材料: Half catty of fresh large clams; 2 eggs.

時間: 30 minutes

作法:
1.Remove the clam shells. Rub the meat lightly with sea salt then rinse with water.
2.Beat the eggs well. Season with a little salt and pepper.
3.Mix the clam meat with the beaten eggs, then pour into a deep dish.
4.Boil some water. Steam the egg mixture in step (3) over water for about 10 minutes.

To keep the egg surface smooth, do not remove the lid while steaming.

For a smoother texture, add stock to the beaten egg (3 parts eggs; 1 part stock).

Clams can be cooked in the shells. The taste is fresher and the dish looks more appetizing, but the clam shells must be thoroughly cleaned.

Do not rub the clams with salt for too long or they would become tough. Freshness would be affected too.

You can also use jumbo clams which are tastier but a little hard in texture. Overcooked jumbo clams are very tough.
