Steamed salty fourfinger threadfin

材料: 1 salty fourfinger threadfin; some chopped spring onion and shredded ginger.

時間: 20 minutes

作法:
1.Rinse the salty fish with water then pat dry.
2.Place the clean salty fourfinger threadfin on a plate (with skin side facing down and underside facing up). Sprinkle shredded ginger on top and steam for 10 minutes.
3.Sprinkle chopped spring onion to serve.

Salty fish is a seafood delicacy unique to the Southern District fishing community. Preparation is similar to the Japanese “overnight dried fish”. It was original a way for fishermen to preserve daily unsold catches.

It is simple to prepare a salty fish. Simple soak a gutted fish in salt water for a few hours then air dry. As it has a salty flavour, there is no need to add soya sauce or salt when cooking.

Fourfinger threadfin is only one of the many kinds of salty fish. You can find other varieties at local fishmongers.
