材料: 300g black eye beans; 50g dried shrimps; 2 Chinese pork sausages; 240g rice flour; 10g mixed spices powder; some chopped spring onion. 時間: 2.5 hours  
 

Black eye bean cake

材料: 300g black eye beans; 50g dried shrimps; 2 Chinese pork sausages; 240g rice flour; 10g mixed spices powder; some chopped spring onion.

時間: 2.5 hours

作法:
1.Wash the black eye beans and soak in water overnight. Boil in hot water for 1 hour until soft.
2.Cut the sausages into small dices. Stir fry them with the dried shrimps on high heat.
3.Mix the rice flour and mixed spices powder, then add 250g of water and blend well until there is no powder lumps. Add the fried sausages and dried shrimps.
4.Boil 250g of water, add the black eye beans and bring to the boil. Add the blended flour and powder mixture in step (3) and mix well. Season with salt.
5.Put the mixture in step (4) in a steaming dish. Steam over water on high heat for about an hour.
6.Sprinkle chopped spring onion on top when cooked.

For a more springy texture, add a little non-glutinous flour.

To see if the cake is completely cooked, insert a clean bamboo stick into the centre then draw it out. If there is no sticky flour on the bamboo, the cake is done.
