Fresh moon scallops steamed with garlic and rice vermicelli
材料: 10 moon scallops; 1 bunch of rice vermicelli; 3 cloves of garlic.

1.Remove the red top shells of the scallops and remove the black sand veins around the meat. Wash thoroughly with water.
2.Soak the rice vermicelli until soft and cut into lengths (about 2 inches). Chop the garlic and mix with a little oil.
3.Arrange the scallops in a steaming pot. Sprinkle the soaked rice vermicelli and garlic with oil on top of the meat of each scallop evenly.
4.Steam over water for 8 minutes. Pour hot oil and soya sauce on top to serve.
|1.Scallop shells are not easy to open. You can ask the fishmonger to do it for you. If you are doing it yourself, stick a small knife inside one scallop from the edge. It will open up once you cut off the muscle that connects the upper and lower shells. Use the red upper shell to open the other scallops. You will find that the curve is just right.|
2.If you cannot get moon scallops, use fan scallops or other scallop varieties instead.
3.Rice vermicelli must be soaked through to be soft and tender.
