材料: Tender lean pork, marine shrimps and dried fish maw, 4 taels each; some garlic and chopped spring onion; Thickening sauce : Mix 2 tablespoons of water with 1 teaspoon of corn starch. 時間: 30 minutes  
 

Shrimps and fish maw stew with shredded pork

材料: Tender lean pork, marine shrimps and dried fish maw, 4 taels each; some garlic and chopped spring onion; Thickening sauce : Mix 2 tablespoons of water with 1 teaspoon of corn starch.

時間: 30 minutes

作法:
1.Soak fish maw in water 4 hours in advance.
2.Remove the shrimp shells and sand veins. Keep only the shrimp meat.
3.Clean the tender pork and pat dry with kitchen towel. Cut into shreds.
4.Cut the soaked fish maw into shreds the size of your little finger.
5.Heat the frying pan, add the garlic, then the shredded pork and shrimps. Stir fry until 70% done and put aside for later use.
6.With the same frying pan, stir-fry shredded fish maw with half bowl of water for 5 minutes. Then add less than half bowl of water, close the lid and cook for 10 minutes.
7.Put the half-cooked pork and shrimps back into the frying pan. Stir fry until meat is completely cooked.
8.Pour the well mixed thickening sauce. Quick stir until it thickens (thickening). Turn the heat off, add chopped spring onion to serve.

Poor quality fish maw has a rotten smell after soaking. If this happens please discard.

To save the trouble of shelling shrimps, get shelled marine shrimps in Ap Lei Chau wet market; or replace with fish balls made with cuttlefish and minced shrimps (cook in boiled water before stir frying).
